This zucchini bread doesn’t know if it’s a sweeter bread, cupcake or muffin. With a bit of vanilla frosting, it is a recipe for cupcakes.
1 1/2 cup flour
1 cup brown sugar
2 teaspoons baking powder
2 heaping teaspoons cocoa powder
1/2 teaspoon each cinnamon, nutmeg, salt, vanilla
1 1/2 cup grated zucchini (2 smaller or 1.5 medium)
1/3 cup vegetable or canola oil
2 tablespoons milk
1 tablespoon orange zest (or to taste)
Mix all ingredients and bake about 35 minutes at 350 degrees.
